Balanced Recipes was the first cookbook published by The Pillsbury Flour Mills Company. It was prepared "under the personal direction of Mary Ellis Ames, head of the staff of Pillsbury's Cooking Service," in Pillsbury's home-type experimental kitchen in Minneapolis. It contains 11 tabbed sections featuring 244 card recipes. Sections include: Breads. Cakes, Cookies, Desserts, Luncheon and Supper Dishes, Macaroni and Spaghetti, Meat and Fish, Pies, Salads, Soups and Sauces, and Vegetables. The recipes are attached by a metal comb binding attached to an aluminum case.

Alas, Mrs. Mary Ellis Ames was a “Betty-Crocker style” fictional spokesperson.
